Vegan Banana Nut Bread
Been on a bread making kick lately, so I wanted to share my delicious recipe with everyone! This recipe is egg-free, oil-free, and can be made gluten free too but I have not tried it with gluten free flour yet, so I’m not sure how that recipe turns out but I’m sure it’ll be great! I’ve baked with gluten free flour before and could barely tell the difference.
To make the recipe egg-free, use applesauce and flaxseed instead. You want to make sure you mix the flaxseed with water in small bowl first and let it sit for a few minutes while you get everything else together.
Instead of oil, I use homemade or no sugar added applesauce. I make my own applesauce since Cora eats it all the time. I use Pink Lady apples because they are sweet yet tangy like a Granny Smith. If you’ve never had a Pink Lady apple, you’re missing out!
To keep the amount of added sugar in the recipe down, I let the bananas get extra ripe. In case you didn’t know, bananas starch turn into sugar once they start to turn brown, making it sweeter. This is why I eat bananas with still a little green on them.
The recipe below makes two loafs of bread, so if you only plan to make one, cut the recipe in half!
4 cups of unbleached white whole wheat flour
1 tsp salt
1/2 tsp cinnamon
2 tsp baking soda
1 cup chopped walnuts
4 tbsp ground flaxseed
2/3 cup water
4 large ripe bananas (with brown spots)
2/3 cup applesauce
3/4 cup organic white sugar
1/2 cup coconut milk or almond milk
get out 3 mixing bowls - 1 large, 1 medium and 1 small.
mix 4 tbsp of flaxseed with 2/3 cup of water in a small bowl and set to the side while you mix everything else.
combine wet mix - in a large bowl, mash 4 bananas (I leave mine kind of chunky), then add in the 2/3 cup applesauce, 3/4 cup organic white sugar and 1/2 cup coconut milk or almond milk.
now add the flaxseed/water mix to the wet mix bowl & stir it up.
combine dry mix - in the medium bowl, add 4 cups of white whole wheat flour, 1 tsp salt, 2 tsp baking soda, and 1/2 tsp cinnamon.
slowly add the dry mixture to the large wet mix bowl.
once everything is mixed up good, gently fold in the walnuts.
oil your baking loaf dish with coconut oil or olive oil and fill with the bread dough until 1/2 way full.
bake for 1 hour on 350 degrees.
